Most weekends, steak night at our house follows almost the same pattern. I get the steak going, then spend more time than I’d like to admit standing in front of the fridge trying to decide what else is going on the table. The steak part is never the hard part. What to serve with steak is the part that actually takes some thought, because a steak dinner can lean heavy fast if I’m not careful about what goes next to it.

There are potato side dishes for steak, the kind that range from a fifteen-minute air fryer batch to a cheesy scalloped potato bake when I have more time to spare. There are fresh salads to serve with steak for when I want something lighter to balance out a rich cut of meat. Veggie side dishes for steak round things out, roasted, grilled, or sauteed, depending on what’s sitting in my fridge that week. And because steak rarely shows up at our table without something to spoon or dip into, I threw in a few sauces too.

- Cook steak last. Steak cooks quickly, and the flavor is the best when served hot and freshly rested. You can season and prepare your steaks ahead of time but wait until you’re almost ready to sit down at the table to cook the meat.
- Simple is best. Let the steak shine in all its medium-rare glory. It’s totally okay to serve a simple side dish like a single-ingredient roasted vegetable and let the steak take all the credit for a delicious meal.
